Mozaik has been shipping to shops for years, and that shows in the places a young product cannot fake: accumulated edge cases, a large user community, training material made by other users, and a catalog of machining behaviour hardened by thousands of shops. We are in early preview and onboarding a few shops at a time.
If you are Windows-only, happy with your current output, and your shop is not feeling the friction of quoting outside the design tool, there is no urgent reason to move. The shops this fits are the ones who want the client-facing side and the machining side to be the same system, and who have people working on something other than a Windows desktop.
